Ingredients:
For the Potato Filling:
– 4 large potatoes, boiled, peeled, and mashed
– 2-3 green chilies, finely chopped

– 8-10 curry leaves

– 6-8 pav (soft dinner rolls)
– Green chutney
– Tamarind chutney
– Garlic chutney (optional)
– Oil for deep frying
Instructions:
1. Prepare the Potato Filling:
– Heat some oil in a pan. Add mustard seeds and let them splutter.
– Add cumin seeds, chopped green chilies, and curry leaves. Saute for a minute.
– Add ginger-garlic paste and sauté until raw aroma disappears.
– Add turmeric powder and mashed potatoes. Mix well.
– Add salt to taste and chopped coriander leaves. Mix until well combined. Remove from heat and let it cool.
2. Make the Batter:
– In a bowl, mix chickpea flour, turmeric powder, and salt.
– Gradually add water and whisk until you get a smooth, lump-free batter. The batter should be thick enough to coat the back of a spoon.
3. Assemble and Fry:
– Take each pav and slice it in half, but not all the way through.
– Spread green chutney and tamarind chutney on both sides of the pav.
– Place a spoonful of the cooled potato mixture in the center of one side of the pav.
– Close the pav and press lightly to sandwich the filling.
– Heat oil for deep frying in a pan.
– Dip each stuffed pav in the batter, ensuring it’s coated evenly.
– Carefully place the coated pav into the hot oil and fry until golden brown and crispy. Fry in batches if necessary.
– Remove the fried vada pav using a slotted spoon and drain excess oil on paper towels.
4. Serve:
– Serve hot vada pav with more chutney on the side.
